Recipe of the Week- Gluten Free Banana Muffins

Its the time of week again....................... Recipe of the week.
Todays Recipe is 'Gluten Free Banana Muffins' , this recipe I found allows the muffins to taste normal even though they're gluten free!
Recipe
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 3/4 cups Gluten Free all purpose flour
1/2 cup (8 tablespoons) soft butter
2/3 cup sugar
2 large eggs
1 1/2 cup very mashed ripe bananas (about 2 medium bananas)
1/2 cup chopped walnuts.

Method
- Preheat the oven to 180 degrees. Line a muffin tin with muffin cases.
- Whisk together the baking powder, baking soda, salt, cinnamon, and flour .
- Then beat together the soft butter and sugar in a different bowl
- Beat in the eggs one at a time.
- Add the dry ingredients to the mix in the bowl gradually while still adding the mashed bananas, beating well.
- Then beat at medium speed for 30 seconds until combined.
- Stir in the walnuts (optional)
- Scoop the batter into the cases with an icecream scoop or tablespoons.
- Bake the muffins for 22 to 25 minutes until the skewer comes out clean . Remove from the oven and your done!
