Recipe of the Week- Gluten Free Banana Muffins

Hey Guys,
Its the time of week again....................... Recipe of the week.
Todays Recipe is 'Gluten Free Banana Muffins' , this recipe I found allows the muffins to taste normal even though they're gluten free!

Recipe
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups Gluten Free all purpose flour
  • 1/2 cup (8 tablespoons) soft butter
  • 2/3 cup sugar
  • 2 large eggs
  • 1 1/2 cup very mashed ripe bananas (about 2 medium bananas)
  • 1/2 cup chopped walnuts.

    Method
    1. Preheat the oven to 180 degrees. Line  a muffin tin with muffin cases. 
    2. Whisk together the baking powder, baking soda, salt, cinnamon, and flour . 
    3. Then beat together the soft butter and sugar in a different bowl
    4. Beat in the eggs one at a time. 
    5. Add the dry ingredients to the mix in the bowl gradually while still adding the mashed bananas, beating well. 
    6. Then beat at medium  speed for 30 seconds until combined.
    7. Stir in the walnuts (optional) 
    8. Scoop the batter into the cases with an icecream scoop or tablespoons. 
    9. Bake the muffins for 22 to 25 minutes until the skewer comes out clean . Remove from the oven and your done!
